I've been coming to Toni and Guy at Canary Wharf for a number of years and having my hair cut by Jenny for the last two. I only get it done every 2.5-3 months and have it cut really short and then let it grow out. It's always cut so well that it looks good at all stages. Despite the infrequent nature of my visits Jenny always remembers how I have it - and usually picks up our conversation from where we left it off. So whilst it's not cheap, it's definitely excellent value for money.
